Hi, I'm Nick. I'm Lisa. I'm the chef and we're the owners of Agnes and Sherman. Agnes and Sherman is an Asian American diner located in Houston, Texas. When we welcome you in, we just want you to feel super homey, like there's a sense of familiarity. It's really meant to be an experience that is shared. Our savory scallion waffle is a fermented waffle batter that we finish with fresh scallions as it's being cooked inside the batter itself. It's a mix of ap flour cornstarch. We also swap out the fat for scallion oil that we make. So it has a very oniony, savory flavor all throughout. It's served with a side of sambal honey butter, and we kind of use it as our bread and butter service. Something that starts the table off. Almost every table orders it, and it's just a really good representation of what an Asian American diner is. The cheeseburger fried rice. It's a pretty traditional method of making fried rice with just some non traditional ingredients. We start with egg, ground beef, onions, day old cold refriger rice. A hamburger tare brings this kind of beefy umami flavor to everything, and it all just gets wok fried. We top the fried rice with some patty melt sauce, a couple slices of American cheese, and some sesame seeds. This dish is a little bit of an homage to my uncle's diner in Oakland. He had a breakfast fried rice that you would put American cheese on, and I'd never seen anything like that. It is a representation of two very static dishes in different cuisines kind of being brought together. And it creates this other third thing, which is what we're trying to do at the restaurant.
