Have a master's in nutrition, and I'm a firm believer that salads without lettuce are superior. And this is my current favorite, cucumber chicken salad. I am addicted to putting things in jars and calling it a meal. So today we're going to make some Greek cucumber salad jars. Start by slicing up a cucumber. Feel like this isn't the safest. Also sliced up some mini red bell peppers. I also have some green onion. I'm not really feeling red onion. Sometimes red onion makes my stomach hurt. I don't know what that is. Our diced up pre cooked chicken. Hopefully I could fit all of this. Some kalamata olives, feta cheese. Oh, tzatziki. I could just like drink this. It's so good. Where am I even putting this? We like. I got this. That was a bit more of a struggle than I had planned. But don't worry, we figured it out. Healthy eating doesn't have to suck. You just have to stop over complicating it. That is so fucking good.
